Buckwheat Pancakes

Buckwheat Pancakes with Cinnamon Bark essential oil

Cocobana Gluten Free Pancakes

INGREDIENTS

1 Banana
1/3 cup organic coconut flakes (or desiccated)
2 Free Range organic eggs
Pinch Himalayan rock salt
Teaspoon coconut oil

DIRECTIONS
In blender or Thermomix whiz the coconut as fine as you can.

Chop up banana and add with pinch salt and 2 eggs - blend. 

Heat pan and add oil to cook pancakes ( they cook faster than normal pancakes)

They don't need any sweetener but can top with berries of Raw Fruit Jam.

Raw Fruit Berry Jam

INGREDIENTS
2 cups fresh berries
3 tablespoons chia soaked in 1/2 cup water soaked until completely jellied
Coconut syrup or maple syrup sweetened to taste
1 tablespoon lemon juice


DIRECTIONS
Start by soaking chia seeds in 1/2 a cup of water or apple juice and one tablespoon of maple syrup.  If you are using a berry that is not very sweet, like currents, you will need to use the second tablespoon of maple syrup.  

Add chia jelly into the Vita-Mix with berries and blend until smooth.  

Refrigerated the mixture until  firm.
